This was also one of my favorites from the cookie party!:
Chocolate Chip Pumkpin Cookies
½ cup Shortening
½ cup Butter
1 cup White Sugar
1 cup Brown Sugar
2 Eggs
2 tsp. Vanilla Extract
1 can of Pumpkin
4 cups Flour
1 ½ tsp. Baking Powder
1 ½ tsp. Baking Soda
1 tsp. Salt
1 ½ tsp. Ground Cinnamon
½ tsp. Ground Nutmeg
1 cup Chocolate Chips
1. Preheat oven to 375°. Grease cookie sheets.
2. In a large bowl, cream together the shortenings and both sugars until smooth. Beat in eggs one at a time. Stir in vanilla and pumpkin until well blended. Combine flour, baking powder, baking soda, salt, cinnamon and nutmeg in a separate bowl; stir into the pumpkin mixture. Mix in the chocolate chips.
3. Drop spoonfuls onto cookie sheets. Bake for 12-15 mintues until edges begin to brown. Allow to cool for a few mintues on the baking sheets before removing to write racks to cool completely. Makes about 6 dozen cookies.
