Homemade Butter Mints
These were made at my wedding, and I ran across the recipe today so I thought I'd share. I originally got the recipe from my good friend Debbie.
Homemade Butter Mints
1 cube real butter
3 lbs. (1½ bags) powdered sugar
8oz. Cream Cheese
¼ tsp. flavoring of peppermint
Soften butter and cream cheese, combine all ingredients and mix until smooth. Pipe them onto wax paper and cool in fridge. You can also use molds if you prefer. Makes about 170 mints - depending on the size.

Recipes
I got these recipes from my friend Jordan's blog. I asked her if I could post them here, and she said "sure" so here they are. I haven't tried them yet, but they all sound wonderful. Isn't she just crafty to put them in recipe card form with cute pictures?

Lee Family Caramels
Lee Family Cream Caramels
•2 Cups White Sugar
•1 ¼ Cups White Corn Syrup
•2 Cups Cream -
***Bavarian Cream & Bakers Sweetened Cream are the best creams to use but Heavy Whipping Creams works too.
•4 TBS. Butter
Combine in large heavy saucepan over high heat. Bring to a boil. Stir. Set timer for 10 minutes. Stir. Set timer again for 10 minutes. Stir again. Test candy in a glass teacup in cold water. When the candy tests firm add: (*When it is boiling, don't stir, only stir when directed)
•½ tsp. Salt
•1 Cup Chopped Pecans
Cook 3-5 minutes more – Remove from heat – Add:
•1tsp. Vanilla
Stir. Pour into a well-buttered aluminum shallow oblong cake pan. Let cool – Turn out onto cutting board, cut and wrap in pieces of wax paper.
